This would, admittedly, be a hard weapon to use, but I think it would be an interesting experiment to have mortars, so you can lob shots over walls.

That would add an interesting aspect to the gameplay. It would be a very large and difficult step to implement gravity on bullets, however, especially considering that the current server version has no idea where the bullets are in a map. I can't speak for future versions though. :D

Bullets will always travel in a straight line, that is a design choice that was made long ago. Mortars have been "shot down" (pun intended) numerous times.

What about guided missiles? I'm quite against this idea, as it would just be an overcomplicated novelty (no offense), but couldn't theoretically the same principle be applied to a "mortar"?

Only if you locked it onto a bot below the ground, and somehow got the curve like a stone's throw.
