this is a stupid question after playing bz for so many years, but how do you start the timer in a GU match? on quol or other official GU match servers?

/countdown 15
Where 15 is the number of seconds until the countdown really starts. If you just type /countdown it will be 10 seconds.

/countdown pause
for pausing.

/countdown resume
for resuming a paused countdown.

The duration of 30 minutes is set by default, you dont have to worry about that. Have fun!

How do u change the minutes because sometimes we have the continuation of a game.

That can only be changed by the server owner by restarting the server with the new setting.
To "continue a match", just play the agreed amount of time.

Some servers have a plugin or something like that. You can type /timelimit 15, 20, 30, etc. on those... but I think that's mainly with ducati or the late open league...

bzf.guleague.org:5158 features the timelimit-plugin which lets you set the duration of a match. Please note that this should only be used to finish matches that couldnt be played to the end some time before. guleague only allows 30 minute matches, shorter matches wont be entered into the league site. For non-official matches you can of course use the plugin, e.g. for a 15-minute funmatch.
