When it asks what network interface to listen on what does it mean?

It's asking which network interface (specified via an IP address) you want bzfs to bind to. You typically only need to change this if the computer running bzfs has more than one IP address. By default, bzfs binds to 0.0.0.0, which means it will respond on any network interface.
